Bacon Fried Rice

Rice makes up a huge chunk of our family meals. We have it with most of our stews and we love fried rice. Fried rice is versitile and there are no limits on what you can do with it. This bacon fried rice recipe is quick and simple, yet delicious. Every time I make it, my kids ask for more.

Bacon Fried Rice

Ingredients for…

  • Extra virgin olive oil for fried rice and stir-frys, however, I had ran out, so I used 2-3 tablespoons of canola oil.

  • Red, yellow & red capsicums (¼ each colour). These add a sweet flavour and a burst of colour to the fried rice.

  • 1 cup mixed vegetables (frozen) - If you have fresh vegetables, feel free to use that. Just cut them uniform sized so that they cook uniformly.

  • 1 medium red onion - Red onions are great in fried rice. You can also use brown onions and/or spring onions.

  • 1 large tomato - It adds flavour and colour to the fried rice.

  • 200g diced bacon for convenience but any bacon can do.

  • For seasoning, I used 1 tablespoon of vegeta, plus salt and black pepper to taste.

  • ½ teaspoon each of paprika powder, turmeric powder, coriander powder, cumin powder and garlic powder; but feel free to experiment with different spices.

  • Use leftover or pre-cooked rice. Cold rice is best for fried rice so if you don’t have leftover rice, cook some before making your fried rice, though it is crucial that you let it to cool fully before frying to avoid getting mushy fried rice.

  1. Preparing the Ingredients

  • I chop/dice all the vegetables and measure all spices and seasoning to ensure everything runs smoothly once I start cooking.

2. Cooking the fried rice

  • I start by heating some canola oil, then add the bacon. I stir for 1-2 minutes. I prefer extra virgin olive oil for this recipe but I had run out of it.

  • I add the onions and capsicums (red, green & yellow) and stir for 1 minute.

  • I add the tomatoes and stir for 2 minutes.

  • I now add the spices and seasoning, stir for a minute, then, add the vegetables. I am using frozen vegetables.

  • I am using vegeta, garlic powder, turmeric powder, cumin powder, coriander powder and paprika, however, you can experiment with different spices and adjust the taste to your liking.

  • I add black pepper, stir to combine and adjust salt to taste. I continue stirring for 3-4 minutes or until the vegetables have softened.

  • I add the rice and continue stirring until everything is well combined. The aroma is so good at this point.

  • The vegetables are cooked and the rice is evenly fried.

  • The fried rice tasted just right, so I turn the heat off and serve.

3. Serving the Fried Rice

  • Fried rice is versatile and so it can be served as a main or side dish.

  • It can be served by itself, or as a side dish with grilled meats, sautéed vegetables or salad.

Storing the Fried Rice

  • Storage - Store in the fridge in an airtight container for 2-3 days.

  • Reheating - Sprinkle a little water on the rice and reheat in the microwave.

Notes

  • Fried rice is best cooked with day old rice. Always cook fried rice with cold rice. The moisture in hot rice will ruin your rice, turning it into a mushy mess.

  • If using freshly cooked rice, let it to cool down before cooking the fried rice.
